Sandwiches of Lockdown

On the weekend I made myself the best sandwich of lockdown so far. I love a sandwich.

When people ask me what is my favourite food is, I enjoy replying with a cheeky smile “Sandwiches!” They’re so simple yet there are endless combinations and options, no 2 are the same. I’ve made a couple of decent ones over the last few months but this one really hit the spot.

Bread is obviously the foundations. If you build from a couple of loaf slices they end up going soggy and you have huge structural problems. I prefer a baguette cut it half. This sandwich was constructed from a  “taste the difference” sourdough baguette from Sainsbo’s. Nice!

There aren’t many times I go to the supermarket without picking up a new tub of humous, I’m addicted. In my opinion, a decent sandwich will always require a thick spread of the stuff. 

I roast vegetables most days, can’t really get enough of the guys. Here I went for the classic red onion, red pepper and courgette combo. Bit of olive oil on top and a nice bit salt. (Got the boujie pink stuff in atm)

I like to think of myself as a bit of a falafel connoisseur. As a vegan when it comes to buying a quick lunch out it is often what you end up getting.

Shop bought falafel isn’t quite as good as from you local falafel wrap man, just not quite as crispy and fresh. In this sarni it was perfect tho. Added some nice herbs and spices to the mix.

And a quick zig-zag of vegan sriracha mayo on top.

Voila!
